How it all started
I grew up in an Italian household as my grandparents immigrated from Italy. I have always loved to cook, but I never truly felt a passion until I was diagnosed with celiac disease.
Our story
After being diagnosed with celiac disease in 2020, I noticed how limited I was to my old favorite foods. I am a very picky eater, and changing my diet didn’t seem to be happening anytime soon. So, like everyone else these days, I went online and searched for my favorite recipes in a gluten-free version. I noticed only 3 to 4 recipes compared to the regular copycat recipes with thousands. These recipes were also always slightly off, whether it was taste or texture, so I knew I needed to change that.
Our approach
Once noticing this, I made it my mission to test all these gluten-free renditions of my favorite fast food places or store-bought foods that I can no longer have and find the recipe’s pros and cons. Once I do so, I create my own recipe based on them and test it to ensure it is perfect. After a few tweaks, I get a recipe that always satisfies my cravings.
